This Berry Overnight Oats recipe is from The Soulful Spoon.
Overnight oats are a great way to enjoy oats in the morning. And you save time by having your breakfast ready-to-go.
Oats and berries go rather well together.
Using frozen berries allows the extra liquid from the berries to soak into the oats. This adds a lovely colour, texture, and hint of sweetness.
So find a glass jar or mug, load it up with oats, a bit of fruit, some liquid, and a dash of extra flavour.
Then let it sit overnight while you get a good night sleep.
And it’ll be ready to go when you get up!
Ingredients you’ll need for these overnight oats:
- quick oats
- frozen mixed berries
- unsweetened non-dairy milk (there are plenty to choose from)
- vanilla extract
- walnut pieces
- dash of sweetener
- chia seeds
- coconut flour or almond meal
You can use vanilla flavoured unsweetened non-dairy milk for added vanilla goodness. Or, if you’re not a huge vanilla fan, you can go with a plain variety of non-dairy milk.
Although the aroma from the vanilla extract is always a good touch and completes the recipe nicely.
