Chickpea & Veggie Noodle Soup

This Vegan Chickpea Noodle Soup recipe is from Karissa’s Vegan Kitchen.

With lots of chunky vegetables, chickpeas, and your favourite noodles, this soup is the perfect way to warm up at the end of a cooler day.


  • water
  • noodles (you can even use chickpea noodles!)
  • vegetable broth
  • onion
  • carrots
  • celery
  • chickpeas
  • herbs & spices: cloves, parsley, sage, basil, oregano, paprika, thyme, black pepper, salt (optional), cayenne (optional)

Note: Being sure to saute with vegetable broth and using an oil-free broth (or making your own) will keep this recipe oil-free.

Also, adding in the noodles at the end, like this recipe suggests, is a nice way to keep the noodles fresh. Because who wants mushy noodles?
