Cranberry Orange Muffins

This featured recipe for Vegan Cranberry Orange Muffins is from The Vegan 8.

Although the recipe is for a cranberry-orange duo, it can be altered to include a different fruit (such as blueberries or blackberries).

Or, you can sub-out the fruit altogether and go for some vegan chocolate chips. But that probably wouldn’t interest anyone. 🙂

In this recipe the ingredients are flexible, but be sure to follow the measurements as they are. Because Brandi knows what’s she’s doing.

Ingredients:

  • oat flour
  • potato starch
  • baking soda
  • cinnamon
  • fine sea salt
  • fresh orange and zest
  • unsweetened applesauce
  • light brown sugar
  • cranberries (fresh or dried, depending on your preference—read the “recipe notes”)

Note: Do be sure to add the orange glaze. It compliments the muffins nicely.
