The original recipe post from Vegan Runner Eats also includes an important link to Dr. Caldwell Esselstyn’s site – FAQ about his diet recommendations and why to eliminate oil completely. Here’s a bit about oil from his site:

“Why does the diet eliminate oil entirely?

NO OIL! Not even olive oil, which goes against a lot of other advice out there about so-called good fats. The reality is that oils are extremely low in terms of nutritive value. They contain no fiber, no minerals and are 100% fat calories. Both the mono unsaturated and saturated fat contained in oils is harmful to the endothelium, the innermost lining of the artery, and that injury is the gateway to vascular disease. It doesn’t matter whether it’s olive oil, corn oil, coconut oil, canola oil, or any other kind. Avoid ALL oil.”

  • Thank you for including my recipe in your roundup! This is an oldie but goodie, I should make it again. Oh, and I’ve been obsessed with cauliflower hot wings lately! They’re especially delicious with Vegan Blue Cheese Dressing by Follow Your Heart (the makers of Vegenaise).

For sure! “An oldie but a goodie” – often make the best kind, you’ve gotta have your go-to recipes. 😉 I really like the big chunks for carrots in this one. And a good tip about the Vegan Blue Cheese Dressing. Thanks for sharing – and for your recipes!

  • I love Korma! When I eat it, I feel guilt though, because I know it probably has dairy in it. Thanks for posting this! I will have to do a grocery trip very soon!
