This featured vegan recipe is a Lentil & Sweet Potato Shepherd’s Pie from One Ingredient Chef.
The sweet potatoes (or yams, depending on what you use) provide some great colour and subtle sweet flavour. Along with all of the veggies and herbs, lentils add the finishing touch to this delicious meal!
As it’s a casserole, you can always double the recipe and keep the leftovers in the fridge, enjoying it throughout the week, or make it for some company, since it has great festive autumn colours. Either way, this vegan shepherd’s pie is definitely a staple to have on your go-to recipe list!
