Featured Oil-Free, Plant-Based Recipes

Here are some more featured plant-based recipes. These are all low-fat, oil-free, plant-based recipes that can be found on various vegan and plant-based sites.

 

We’ll start off with a soup…

 

Gingery Carrot and Tomato Soup by Fat Free Vegan

Ingredients:

1 large onion, chopped

4 cloves garlic, minced

1 1/2 tablespoons ginger root, minced

3 to 4 cups vegetable broth

1 1/2 pounds carrots (about 6 large), trimmed, peeled, and sliced

1 14.5 ounce can diced tomatoes (fire-roasted preferred)

2 to 3 teaspoons low-sodium soy sauce (or wheat-free tamari)

1/4 teaspoon cayenne pepper or hot smoked paprika

1 teaspoon tahini

Then we’ll move on to a salad…

 

Radicchio Salad with Cranberry Orange Dressing by Darshana Thacker over at Forks Over Knives

Ingredients:

⅓ cup walnut halves

For the dressing:

1 cup fresh orange juice

½ cup cranberries, fresh or frozen

6-7 Medjool dates, pitted

Pinch cayenne pepper

(Sea salt)

For the Salad:

1 head romaine lettuce, chopped

½ head radicchio, chopped

½ cup fresh pomegranate seeds

½ cup parsley leaves, loosely packed

And then we’ll finish with some pasta…

 

Pasta Shells with Chickpea “Meat” Sauce by An Unrefined Vegan.

Ingredients:

1 large onion, chopped

1 small carrot, peeled and minced

3 cloves garlic, minced

1 15-ounce can chickpeas, rinsed and drained

1 tsp. dried oregano

1/2 tsp. dried basil

1/2 tsp. dried thyme

1/2 tsp. garlic powder

1/2 tsp. smoked paprika

1/4 tsp. dried rosemary

dash red pepper flakes

1 28-ounce can crushed tomatoes

1 Tbsp. red miso paste (I use a soy-free variety from South River)

1 Tbsp. tomato paste

~1.2 Tbsp. pure maple syrup, or to taste

13 ounces gluten-free (or whole wheat/grain pasta shells)

vegan Parmesan cheese substitute, for garnish (optional)

chopped fresh basil, for garnish (optional)

  1. Hi, thanks for the oil free recipes and cook book authors 🙂 It can be hard to find the oil free part, so appreciate it! I have one other recipe person to add as a resource. Not sure if someone already mentioned this site- The woman who runs this is so inspiring. If you create a free membership there are about 100 recipes (and more if subscribe for coaching and such but don’t have too!) Also you can watch some interesting classes and stuff. This link is too a free class about essential kitchen tools to start a plant based diet. Cheers
