Packed with whole plant foods, herbs, and spices, this sweet potato salad is delicious, filling, and full of colour.

Serve the salad over a whole grain, with tortilla chips or wraps, or along-side leafy greens to complete this meal nicely. Trying out “salad boats” is highly recommended!

Use fresh herbs if you can. They add in a fresh aroma, flavour, and colour that really makes this dish that much more enjoyable.

What you’ll need:

  • sweet potatoes
  • black beans*
  • bell pepper
  • cucumber
  • fresh lime juice
  • herbs: cilantro/flat-leaf parsley, oregano, chives
  • spices: cumin, black pepper, allspice, paprika
  • (optional) sea salt, maple syrup, chipotle hot sauce

Skip the added salt to keep this salad low in salt. Don’t worry, it still tastes great!

SOS-free (salt, oil, sugar-free) option: Additionally, you can leave out the Tabasco sauce and sweetener for an SOS-free version, as well as making sure to use salt-free beans. Again, thanks to the whole plant foods and fresh herbs, this recipe still has plenty of flavour.
