Oil-Free, Vegan Slow Cooker Minestrone

This slow cooker Minestrone Soup recipe from My Whole Food Life is oil-free, vegan, and gluten-free.

Loaded with vegetables, this is a good, hearty meal to enjoy after a long day.

Ingredients:

  • vegetable broth
  • tomatoes
  • celery
  • carrots
  • onion
  • green beans
  • pasta
  • herbs & spices: garlic, basil, oregano

Note: To chop the celery, carrots, and onion, you can use a blender, if you don’t have a food processor.
