This recipe for Instant Pot or Crock Pot rosemary lentils, beans, and yams is from PlantBased Recipe.

Brown rice, yams, navy beans, and lentils create a great combo. With the added herbs and spices, this dish is both flavourful and aromatic.

For this oil-free, plant-based recipe you’ll need:

  • water
  • brown rice
  • brown lentils
  • navy beans
  • yams
  • garlic
  • rosemary
  • thyme
  • yellow (or white) onion
  • vegetable broth (optional)

Top it off with lime and arugula for some added flavour and colour.

Instant pot and crock pot meals are convenient for those nights you don’t want to spend a whole lot of time in the kitchen.

This recipe, in particular, is nice because there isn’t much chopping or preparation required. Then after a bit of sauteing, it’s pretty much all up to the instant pot. Just set the timer and come back when it’s done!
