Plant-Based Kichadi

This recipe takes a bit of time to prepare and cook, but it’s well worth it. This Kichadi makes for a perfect Sunday night dinner with the family.

Packed with vegetables and spices, it’s a meal for all the senses.

You’ll have people looking forward to it long before it reaches the table!


For this one you’ll need…

A few staple starches:

  • brown basmati rice
  • yukon gold potatoes (or yellow potatoes if that’s all you can find)
  • dry red lentils
  • yam (this one adds a nice touch of colour)

Next up, green vegetables:

  • celery
  • thawed peas (or fresh if you have them!)
  • kale

You’ll also need a yellow onion as well as water, which you’ll add at various points.

And, of course, the spices:

  • cumin
  • coriander
  • turmeric
  • cardamom
  • red pepper flakes
  • ground clove
  • minced garlic
  • minced ginger

Last, but not least, you can top it all off with some grated walnuts. Or not. Your choice.
