Roasted Red Pepper Hummus
An oil free, low fat, healthy red pepper hummus recipe from Physicians Committee for Responsible Medicine (PCRM). It’s a straight-forward hummus recipe, but with roasted red peppers added to the standard chickpea spread for extra flavour. And if you haven’t already, you’ll want to try out Sweet Potato Hummus as well, with an added twist on traditional chickpea hummus. Hummus can be used as a dip with veggies or crackers, or as a spread on sandwiches or in pitas. It’s a great addition to a snack or meal, and it doesn’t take long to prepare!
For this recipe you’ll need:
Chickpeas (aka garbanzo beans)
Water packed roasted red peppers (if you don’t have any, you can always just use fresh red bell pepper)
lemon juice (fresh is best)
