Chickpea Curry with Boiled Potatoes from Vegan Runner Eats

It’s vegan, oil-free, and gluten-free, and it doesn’t take long to prepare!

Vegan Chickpea Curry with Potatoes, and Vegan Cookies!

What you’ll need:

* 1 can of Chickpeas
* 1 chopped Roma Tomato
* 1/2 of a chopped, Yellow Onion
* Potatoes (However many you’d like. The more potatoes, the further the chickpea curry can go.)
* Kale
* Cilantro
* Curry Spices (whatever ones you have or prefer): curry powder, cumin, tumeric… or make your own homemade curry powder.

The recipe is oil-free. Just use a bit of water to cook up the onion, you don’t need much.

Now this is the perfect meal for kale. And potato goes so well with a chickpea curry. It certainly makes for a filling meal!
