All the flavour in this one comes from herbs and vegetables for a delicious vegan pasta sauce that puts store bought ones to shame

For this Vegan Pasta Sauce you’ll need:

  • heirloom tomatoes
  • cherry tomatoes
  • fire-roasted tomatoes (no salt)
  • onion
  • carrot
  • cremini (or brown button) mushrooms
  • broccoli
  • herbs & spices: granulated garlic, dried oregano, dried rosemary, dried basil, ground black pepper

As you can see this sauce isn’t low on veggies!

The higher quality you can get the more robust the flavour will be.

But work with what you have access to. Can’t get heirloom tomatoes? Just find the freshest, ripe tomatoes you can.

This sauce goes well over pasta, potatoes, winter squash, or any whole grain you like.

You’ll find the recipe instructions on Plantz St.

Blending part of the recipe, then mixing it back into the chunkier sauce makes for a nice consistency. You can always toss a few beans on top too—navy, cannellini, or butter beans go well.
