- onion (yellow)
- potato (yukon gold)
- low-sodium vegetable broth
- herbs: parsley and thyme (fresh or dried)
- granulated onion and garlic
Like many recipes these herbed vegan potatoes are best made with a homemade vegetable broth for the freshest flavour. But if you’d like something that’s ready to go, just look for a low sodium, oil-free vegetable broth like this one. Or use whatever variety of broth you like most.
If you only have powdered onion and garlic (as opposed to granulated), you might reduce the amount called for slightly. However, it’s really about your taste preferences. So, adjust the garlic and onion to suit you.
If you don’t have yukon gold potatoes or yellow onion, don’t worry about it, just use what you have. But they both do add a little natural sweetness to the dish.
Whatever potatoes you use though, the more thinly sliced the better! You can use a mandolin slicer for a very uniform result, or just slice them thinly by hand.
