Vegan Quesadillas

Made with vegan yogurt and chickpeas this recipe is a nice twist to vegan quesadillas.

What you’ll need for this recipe:

  • chickpeas
  • vegan yogurt*
  • avocado
  • tahini
  • lemon juice
  • nutritional yeast
  • arugula
  • spices: mustard, garlic, salt, and pepper
  • tortilla shells**

Quesadillas are always a favourite. They work well as a meal or an appetiser.

The chickpeas, vegan yogurt, nutritional yeast, and avocado in this recipe provide these vegan quesadillas with the perfect cheesy texture. And the silken tofu option works well too!

*A plain flavoured vegan yogurt works best, like So Delicious Greek Style Plain Cultured Almond Milk Yogurt or Almond Dream Plain Yogurt. Or, if you’re the type who prefers to make everything fresh at home, you could go for some easy homemade vegan yogurt.

**To make the quesadillas gluten-free use rice or corn tortillas, or any other gluten-free tortillas you can find. Food for Life has some sprouted corn tortillas that would work well or there’s Del Campo’s Soft Corn Tortillas. Or, (again) you could make your own, that way you can be assured that they’re “certified” gluten-free!

If you plan to share these with friends or family, you can double the recipe and you should have plenty of vegan quesadillas to go round!
