The featured healthy vegan recipe this week is Sloppy Cauliflower Joes from Brand New Vegan.
Cauliflower can be quite a versatile vegetable if you get a little creative. And these vegan sloppy joes certainly prove that.
This plant-based take on a traditional recipe is full of flavour. Plus, it’s a meal you can enjoy with the whole family!
The ingredients you’re going to need are:
- Soy sauce
- Red bell pepper
- Green chiles
- Fire roasted tomatoes
- Brown sugar
- Yellow mustard
- Ketchup (Try this one for an organic, gluten-free, vegan version that has 1/2 the salt! Or, vegan beetroot ketchup is another way to go!)
- Spices: Garlic powder, chili powder, paprika
- Red wine vinegar
Another way to make vegan sloppy joes is with lentils.
Sure to give you that satisfying “full” feeling, lentils are a protein-rich plant-based food. They work well in a variety of more traditional recipes. Just swap out the meat and put in lentils.
Feel free to add or lessen the amount of spice to suit your preferences.
