This Vegan Spinach Lasagna from Forks Over Knives has all the flavour with none of the ill side effects. Just great tasting food.

The silken tofu and tofu ricotta really add the finishing touch and capture that familiar texture. Yet, unlike it’s more traditional counterpart, this meal will sit light and digest easily.

As suggested, it goes quite nicely with a nice, light salad. Together they make the perfect combination.

Since this recipe calls for no-boil lasagna noodles, it might be a bit difficult to make it gluten-free. However, feel free to use brown rice lasagna noodles in this Lasagna from Fat Free Vegan, and make it a gluten-free meal!

  1. to make it gluten free or to just try something different, take eggplant and slice it longwise thinly, bake a bit to dry it a little then just use them as noodles.
