Vegan Stuffed Acorn Squash with Gluten-Free Gravy

Here’s what you’ll need to make this delicious vegan meal.

Ingredients for the stuffed squash:

  • acorn squash
  • kale
  • cremini mushrooms
  • brown rice
  • low-sodium vegetable broth
  • salt-free seasoning and/or salt and pepper to taste
