Vegan Sweet Potato Mac & Cheese

A Vegan Mac & Cheese recipe made with sweet potato and almonds from Cheap Lazy Vegan.

This recipe is oil-free and can be made low in salt and gluten-free too.

This vegan mac and cheese recipe is a bit higher in fat on account of the almonds (or cashews) and almond milk, but it sure is delicious. However, you may not want to make it an every day thing.

That being said, it certainly does go over well at vegan, and even non-vegan gatherings. Just load it into a casserole and take it along to share.

Ingredients:

  • pasta
  • sweet potato
  • almonds or cashews
  • almond milk (unflavoured goes best)
  • dijon mustard
  • lemon juice
  • nutritional yeast
  • salt (optional)

Note(s): For a gluten-free pasta, a corn and rice blend works well. If you can, try to find a brand with non-GMO corn (it’s better for your health and the environment).

As for the sweet potato, orange goes best with this recipe. It enhances the colour and lends a nice texture to the dish.

However, if you want to give a white sweet potato a try, it will likely make for a sweeter mac and cheese.
