Baked Veggie Potato Fritters

oil free veggie potato fritters

Another unique and tasty way to enjoy potatoes, this oil-free, Baked Veggie Potato Fritters recipe is from Veggie Inspired.

The recipe is gluten-free, using chickpea flour to hold the fritters together.

Ingredient list for these oil-free potato fritters:

  • russet potatoes
  • zucchini
  • carrots
  • dried parsley
  • chickpea flour
  • spices: turmeric, garlic powder, paprika
  • sea salt*

*Reduce (or omit) the salt to suit your preferences.

To cook them up without oil, you can line a baking sheet with parchment paper or use a silpat baking mat.

The sauce

Baked potato fritters go well with a bit of sauce.

When making the suggested “spicy and smoky” ketchup, have more control over the salt, sugar, and flavour content by using your own homemade ketchup.

Another good option, if you’d like something a little sweeter is a simple homemade applesauce.

These oil-free potato fritters are perfect for any meal of the day. They also work well in packed lunches or as snacks when you’re on the go!
