This creamy potato recipe is from Vegan Street.

It’s got yukon gold potatoes, kale, almond milk, creamy cashews, vegetable broth, paprika… all making, well, a cheesy potato-kale bake!

I really like that you can just put this one in the oven and not worry about it. Feel free to stir the mixture part-way through the cooking process, but with all the liquid it’s got that’s not really needed. This is a great way to enjoy kale, mixed in with creamy potato-y goodness! 🙂

This recipe is also oil-free. There’s no need, since the veg broth and almond milk provide ample liquid.
