Oil-Free Vegan Carrot Cake

This oil-free and vegan carrot cake from Forks Over Knives is scrumptious, and it can be made gluten-free too.

Sweetened with fruit and made with whole plant foods, you can indulge in this treat without feeling guilty about it!

Ingredients:

  • carrots
  • unsweetened plant-based milk
  • dates
  • raisins
  • banana
  • vanilla
  • rolled oats
  • walnuts (optional)
  • vanilla bean frosting (optional)
  • baking soda
  • baking powder
  • spices: cinnamon, nutmeg, cloves

Note: To make this recipe gluten-free, be sure to use gluten-free rolled oats.

Go with your preference of non-dairy milk (or whatever you have access to). Almond or oat milk, in particular, work well for with recipe.

Not only as a dessert, or a cake to have with tea, this vegan carrot cake can be a nice on-the-go snack as well. Just cut it into pieces and individually wrap them up, so they’re ready to go.
