Root Vegetable & Chickpea Salad

This grated root vegetable and chickpea salad recipe is from PlantPlate.

Not all salads have to be leafy and green. And this one’s a good example of how you can eat a bowl of veggies even if you don’t have any lettuce, or if you’re just looking to get in a bit of variety.

But the fresh herbs do add a nice hint of green and a touch of flavour too.


  • carrots
  • beets
  • chickpeas
  • lemon juice
  • apple cider vinegar
  • mustard
  • herbs & spices: dill, parsley, garlic, black pepper

Note(s): This salad works with raw root vegetables or cooked. You could even sprout the chickpeas if you wanted to.

If you have golden beets, those could be added in as well. They’d certainly lend even more colour to the salad—and a bit of sweetness too!
