Vegan Acai Banana Ice Cream with Oats

This recipe from Jasmine Briones of Sweet Simple Vegan combines two vegan favourites—banana ice cream and oatmeal. Along with a couple of unique additions, this dish is one you can enjoy any time of day.

Not only is the acai-banana ice cream a lovely purple-ish colour, but it tastes delicious too!

If you’re not already a fan of acai, this recipe may just change that.

And topping your oats with a fruity ice cream never did any harm either. Let’s hear it for healthy, guilt-free ice cream!

Vegan Acai Banana Ice Cream with Oats


  • frozen bananas
  • acai*
  • oats
  • millet
  • zucchini
  • vanilla
  • cinnamon
  • maple syrup (optional)
  • additional toppings (optional)

*If you don’t have, or can’t find any acai, you could always substitute it for some other frozen berries. Berries that are blue, black, or a rich red will help to create a similar colour of ice cream.

They all go well with bananas, and they’ll still be delicious!

Further note(s): To keep the recipe added sugar free, just omit the maple syrup.

Particularly if you plan to top it all off with some fresh fruit, the dish shouldn’t need any extra sugar. Fresh, ripe, whole fruits can provide plenty of sweetness.

Fresh fruit, seeds, nuts (especially finely chopped), dried fruits (again chopped into small pieces), or some PB2  (peanut powder that provides a lower fat alternative to nut butters) all make good additional toppings.

Cutting up nuts or dried fruit into smaller chunks means you can get some with every bite without having to add large handfuls to your bowl. And that helps to keep things lower in fat too!

One of the many great things about a recipe like this is that you can change up which toppings you use and make it seem like a different meal each time.

That can add some nice variety into your weekly diet without having to re-invent the wheel each day. A win-win, I’d say!
