  • potatoes
  • celery
  • red onion
  • cornichon pickles
  • bell pepper
  • herbs & spices: dill, parsley, chives, garlic powder, black pepper, salt (optional)
  • avocado (or vegan mayonnaise*)
  • apple cider vinegar
  • whole grain Dijon mustard (or German mustard)

Low salt tip >> To keep your vegan potato salad lower in salt, there are a few things you can do, including:

  • rinse the pickles thoroughly (and find the lowest sodium option you can)
  • use avocado or make your own vegan mayonnaise and skip the added salt
  • make your own or use a salt-free mustard
  • skip any added salt in the recipe

Even if you’re trying to eat lower in sodium, you can still enjoy a hearty potato salad.
