The herbs, spices, and vegetables blend together with the sweet potatoes and almond milk to make this bisque aromatic and give it a creamy consistency.

Vegan Sweet Potato Bisque 

Ingredients:

  • sweet potatoes
  • onion
  • low sodium vegetable broth
  • unsweetened almond milk
  • (non-GMO) light miso
  • herbs & spices: garlic, ginger, thyme, nutmeg, Ceylon cinnamon, black pepper

Note(s): Making your own vegetable broth can cut down on the amount of salt in the dish as well as adding fresh vegetable flavour that simply can’t be found in store bought varieties.

Plus, if you make broth in large batches it can be less expensive and more convenient than buying pre-made options.

Here’s a good homemade, oil-free veggie broth recipe to get you started. You can tweak the recipe as you go to suit your preferences.

Also, if you do make a large batch you can pour any extra broth into ice cube trays and freeze them. Then thaw the cubes out as you need them.
